Pineapple and Tomato Jam Curry





This is a dish which can be eaten with rice as a curry or as a dessert. This is a very popular dish among Muslims in Sri Lanka. Can be refrigerated up to one month.Hope you all will enjoy making it.

Ingredients.
1 big pineapple
3 medium size tomatoes
200g de seeded dates
2 cups sugar
Pinch of salt
50g juggery (optional)

Method
Put the tomatoes to a pan or a bowl and pour boiling water on to it. Keep it covered for 15 minutes.




Chop the pineapple into fine pieces.

Chop the dates into small pieces.
Remove the skin of the tomatoes and blend well.



Put the pineapple to a big pan.

Add the tomatoes on top of it.

Add the dates on top.

Top with sugar and salt.


Cook it on medium heat.



Keep stirring on and off while cooking. Cook for about 30-40 minutes.






The curry will become thick.

Add the grated juggery and leave for about 3 minutes and take it out.




You can serve this curry with rice or have as a dessert. Can refrigerate upto one month.
