Raw Plantain Curry




Ingredients:
4 raw Plantains
½ a onion
3 green chillies
Few curry leaves
3 pods garlic
¼ tsp fenugreek seeds
1 tsp salt
½ tsp turmeric powder
½ tsp curry powder
¼ tsp or less chillie powder
1 ½ cups thick coconut milk
Oil for frying

Method:
Peel and cut the plantain into ¾ inch cubes.
Mix the plantain with ½ tsp salt and ¼ tsp turmeric powder.
Deep fry the plantain in moderate heat till light brown.

Keep it aside.
Take a pan and add onions, green chillies, garlic, curry leaves, fenugreek seeds, ½ tsp salt, ¼ tsp turmeric powder, chillie powder, curry powder and ¾ cup water and allow to cook covered in medium heat.


Once the water is reduced and cooked add the coconut milk.

When the coconut milk is boiling add the fried plantain.


Cook for 2 minutes and take off the flame.

Can be served with plain rice, green cabbage fry and fish or chicken.
