Sri Lankan Chicken Fry


Ingredients:
500g chicken.
1 tsp salt.                                      
¼ tsp turmeric powder.
1 tsp or less chillie powder or pepper powder.
1 tsp curry powder.
¼ tsp mustard seeds.
Few curry leaves.
¼ tsp fenugreek seeds.
1 inch cinnamon stick.
1-2 cardamom.
1 tsp garlic paste.
½ tsp ginger paste.
2 big onions cut finely.
1 big tomato cut finely.
2 tbsp oil.

Method:
Marinate the chicken with salt, turmeric powder, chillie powder and curry powder and keep for ½ hour.

Heat oil in a pan and mustard seeds and allow it to crack.

Add curry leaves, fenugreek seeds, cardamom, cinnamon, garlic paste and ginger paste and stir fry for 2 minutes.

Add the onions and fry till it becomes soft.

Add the tomatoes and fry for 1 minute.

Add the marinated chicken and fry for 2 minutes.

Add 1 cup water cover and allow to cook.

Turn the chicken pieces while cooking.

Chicken curry is ready to be served.


You can add more or less chillie powder according to your taste.
