Special Seafood Rice



Hi everyone I am back after a long break. Sorry I could not post any recipes lately as I had other commitments. Anyway I will try my best to post some good and simple recipes to you as much as the time permits. This is a rice was experimented by me and which is enjoyed by my eldest and the second son. The day I make this I have to make sure that I make more so that there will be plenty of left over for the next day.

Ingredients 
4 cups rice cooked rice.
1 tsp garlic paste.
½ tsp ginger paste.
250g fish cut into cubes.
250g prawns par boiled.
250g squid.
100g carrot cubes or circles.
150g capsicum.
100g cabbage.
150g pineapple cubed (optional).
100g spring onions.
1 big onion cut finely.
¼ tsp turmeric powder.
1-1½ tsp chillie powder.
4 tbsp tomato sauce or tomato paste.
2 tbsp Soya sauce.
2 tbsp corn flour.
¾ cup water.
1 tbsp sugar.
1 tsp salt.

Method
Marinate the fish with salt, chillie powder and lime juice.
Deep fry in moderate heat till its golden brown.
Put 2 tbsp oil to a pan and heat.
Add ginger and garlic paste and stir for 30 seconds. 

Add the onion and stir for about 2 minutes.
Add the squids and fry till half done. 

Add the par boiled prawns and cook for 2 minutes. 


Add the turmeric powder and the salt and cook till the water evaporates. 

Add the cabbage and the capsicum and mix for 2 minutes.

Add the pineapple and mix.

Add the par boiled carrots and the fried fish. 

Mix for few seconds and add the chillie powder and stir. 

Add the spring onions and stir. 

Mix the tomato sauce, Soya sauce, corn flour, sugar and water separately and mix.
Add this to the fish and vegetable mixture. 

According to your taste you can add more salt, chillie powder or sauce. 

Serve the hot rice on to a bowl and turn it on to a plate. 

Top the rice with the seafood special. 

I tempered the rice with leeks. But you can use plain rice too.
