Ingredients
5oog rice.
1 tbsp margarine.
Small piece of cinnamon.
1 clove.
1 cardamom.
Few curry leaves.
1 big onion cut finely.
½ tsp ginger paste.
½ tsp garlic paste.
1 tomato cubed.
1 stock cube.
3 tbsp coconut.
6 cadjunuts.
3 dried red chillies.
100g carrot cubed.
5-6 beans.
50g leeks.
100g chicken (optional).
100g prawns (optional).
Method
Grind the coconut, cadjunuts and red chillies to a fine paste.
Cut the chicken and prawns into small pieces.
Heat Margarine and add cinnamon, cloves and cardamom.
Fry for 1 minute.
Add the curry leaves, onion, ginger and garlic paste and fry for 2 minutes.
Add the curry leaves, onion, ginger and garlic paste and fry for 2 minutes.
Add the tomatoes and fry till its dry.
Add the washed rice and mix for a few minutes.
Add hot water and the stock cube.
Add the ground mixture, vegetable, chicken, prawns and salt.
Allow to cook for 15 minutes.
Open the lid and stir well.
Cook till done.
Decorate with boiled eggs and spring onions. I used deep fried curry leaves.
Serve with any curry you like.
