Cherry Cake



Ingredients

4½ ozs butter
4½ ozs sugar
3 eggs
6 ozs flour
1 tsp baking powder
2 ozs candied peel
2 ozs glazed cherries
½ tsp lemon essence or vanilla


Method


Heat the oven at 180C for 10 mins.
Cream butter & sugar for 10 mins.
Add eggs one at a time & beat well.
Cut the candied peel & cherries & mix with the flour & baking powder.
Fold the flour into the butter mixture and mix.
Add the essence.
Put the mixture into a greased tray & bake for 45 mins.
Enjoy

Note.

You can omit the candied peel and add 2 more ozs of cherries for the cherry taste.
