6 hard boiled eggs
1oz margarine
1oz plain flour
½ pt milk
3 tbsp chopped fresh parsley
Salt and pepper
¼ tsp dry mustard
10oz peeled prawns
3 tbsp grated cheddar cheese
8oz spring onions
Method

Method
Preheat oven to 230oC.
Slice the hard boiled eggs.
Melt margarine in a pan and stir in the flour and keep on stirring for 1 min.
Remove from heat and gradually add the milk.
Bring to the boil stirring until thickened.
Stir in salt, pepper, mustard and parsley.
Arrange prawns and eggs in an oven proof dish.
Pour over the white sauce and sprinkle top with spring onions.
Top with grated cheese.
Bake for 15-20 minutes, until the top is golden.

is this coconut milk?
