Baked Curry Bun



Ingredients

500g Plain flour
10g instant yeast
25g sugar
1 egg
15g milk powder
1 tsp salt
35g margarine
Water

Filling ingredients

250g fish boiled and mashed.
500g boiled potato mashed.
¼ tsp mustard seeds
1 tsp garlic paste.
½ tsp ginger paste.
Few curry leaves
½ a big onion chopped.
2 green chillies chopped.
½ tsp chillie powder
½ tsp pepper powder.
¼ tsp turmeric powder.
1 tsp salt.

Filling Method

Heat oil in a pan and add mustard seeds. When it starts cracking add ginger garlic paste and curry leaves and mix for 2 minutes.
Add onion and green chillies and mix for 5 minutes.
Add the mashed fish, chillie powder, pepper powder, turmeric powder and salt and mix for 3 minutes.
Add the mashed potato and mix well.
Taste the filling and if you need more salt you can add some.
Leave to cool.

Method

Mix ½ cup warm water and the sugar and stir for a few minutes. Add the yeast and cover and keep till it becomes a foamy mixture.
Mix flour, milk powder, egg and the yeast mixture and mix well.
Add warm water and make soft dough.
Knead for 10 minutes. The more you knead is the better.

Put it to a oiled bowl and cover with a damp cloth and leave it to rise for 1-2 hours.
Make small balls a little bigger than a lime and keep for 15 minutes.

Flatten the balls one at a time.
Put some filling in the middle and fold the dough around.



Shape into a triangle or any shape you like.

Heat the oven to 200C for 10 minutes.
Apply butter to a flat tray and arrange the buns on the tray. Leave space between the buns as it will become big when it’s baking.

Bake in the middle shelf of your oven  for 10 minutes.
Apply egg yolk mixed with little yellow colouring with a pastry brash.
Bake for another 10 minutes or until golden brown.
