Brinjal Tomato Fry
Ingredients
250g brinjal
250g
tomatoes chopped
2 onions
chopped
1/8 tsp
mustard seeds
½ tsp cumin
seeds
3 green
chilies
Few curry
leaves
1/8 tsp
turmeric powder
1 tsp salt
½ - 1 tsp
chili powder
¾ tsp
coriander powder
½ tsp gram
masala
½ tsp ginger
paste
½ tsp garlic
paste
Coriander
leaves
2-3 tbsp oil
Method.
Heat oil.
Add mustard seeds & cumin seeds & allow to splatter.
Add onions,
green chilies and curry leaves and fry for a minute.
Add ginger
paste, garlic paste & turmeric powder and fry for 30 seconds.
Cut the
brinjals into finger size pieces and mix with turmeric powder.
Add the
brinjals to the onion mixture fry for 3-4 minutes.
Add the
tomatoes and fry for 1 minute.
Add salt,
chillie powder, coriander powder and gram masala fry few minutes.
Cover and
cook on low heat for 7 – 10 minutes. Keep mixing every 2 minutes.
Open the lid
and cook for few minutes.
Add
coriander leaves and take off the fire.
Serve with
rice or roti.
