Fish and Vegetable bake



Ingredients

250g white fish (Sail fish)
1 big carrot
1 big potato
1 onion or shallot cut finely
1 cup stale rice
1 cup milk
1 egg beaten
1-2 tbsp margarine
1 tsp flour
Salt
pepper
Bread crumbs

Method

Boil the fish with salt, pepper and little water. Cool it and break into small pieces.
Cut the carrot and potatoes into medium size cubes.
Boil the vegetables  till cooked

Heat a pan and add the margarine.
When the margarine melts add the flour and stir quickly.
Off the stew and add the milk and beat with a hand beater.
Put back on the fire and heat it.
Keep on stirring till it becomes a creamy texture.
Add salt and pepper according to your taste.

Heat another pan. Add margarine and add onions and sauté for 30 seconds.
Add the carrot and potatoes and mix for 1 minute.

Add the fish and mix for few seconds.


Add salt and pepper according to your taste.
Add the rice and mix.

Add the white sauce and mix till well combined.


Lastly add the beaten egg and mix well.


Grease a baking dish and spread the mixture.

Arrange with tomatoes and spring onions (optional)

Top with bread crumbs.
Bake on 200C for 20-30 minutes till its golden brown.

Serve with a big salad.
