Brinjal Fry



Ingredients
500g Brinjals.
3 green chillies cut across.
½ a big onion cut into cubes.
Curry leaves.
¼ tsp mustard seeds.
¾ tsp salt.
¼ tsp turmeric powder.
½ tsp flaked chillie powder.

Method
Cut the brinjals into cubes
Heat 3-4 tbsp oil
Add mustard seeds.
When it starts cracking add the curry leaves, green chillies and the onion and fry for 3 minutes in moderate heat.
Add the brinjals, turmeric powder and salt.
 
Fry in moderate heat for 15-20 minutes till its cooked.


Add flaked chillie powder and fry for a few minutes.

If its too dry add some cubed tomatoes.( it depends on each variety of brinjals)
Serve with any kind of rice.
