Vegetable And Egg Fried Rice


This recipe is for one of my loving cousin sisters . Rizna this is for you. Hope you will like my recipe.

Ingredients

2 cups cooked rice
200g carrot
200g white cabbage
200g leeks
3 eggs
1 tsp ginger paste
1 tsp garlic paste
½ tsp salt
½ - 1 tsp chillie powder
1-2 tbsp chillie paste
2 tbsp oil

Method

Cook the rice with 4 cups water, salt and 1 tsp oil.
Cool the rice for about an hour.
Cut the carrot into fine strips.
Cut the cabbage and leeks into fine pieces.
Put 1 tsp oil in a pan and heat. Beat the egg and add to the oil and scramble the egg.

Put 1 tbsp oil in a wok or a big pan and heat it.
Add ginger garlic paste and curry leaves and sauté for 1 minute till you get the smell. 

Add the carrot and fry for 3 minutes. 

Add the leeks and the cabbage and fry for 2 minutes. 

Add salt and chillie powder and fry for 30 seconds. 

Add the chillie paste and fry for 1 minute. 

Add the scrambled egg and mix well. 


Take half of the vegetable egg mixture and keep aside. 

Add half of the rice to the pan and mix. 


Add the other half of the vegetable and egg mixture. 

Top with the remaining plain rice. 


Mix well till the vegetables and rice are combined well. 


Taste and if you like add more chillie paste and salt.
Serve while its warm.
This can be served just as it is with some fresh vegetables.


Or the rice can be served with chicken, fish or prawns.
